Biota chef James Viles to lead culinary operations at Park Hyatt Sydney

Biota chef James Viles has taken on a new role at Park Hyatt Sydney.

Celebrated chef James Viles has taken on a new role at Park Hyatt Sydney where he will oversee all the culinary operations including at signature restaurant The Dining Room.

Viles is best known for his two hatted restaurant Biota Dining in Bowral, NSW, which closed its doors in 2020 due to the combined impact of the bushfires and Covid pandemic.

Viles scooped his first Chef’s Hat at just 23 years old when he was Chef de Cuisine of The Schoolhouse in the Southern Highlands, and has since worked in high profile luxury hotels, both in Sydney and overseas, before opening the award-winning Biota Dining.

Most recently, he held consulting roles with Emirates One&Only Wolgan Valley and Canberra-based Harvac group.

“James’ addition to our team is the first exciting step in our plans to transform The Dining Room and all our culinary experiences at Park Hyatt Sydney,” said general manager Samuel Dabinett.
