Rhys Nicholson has been appointed head chef at Eos by SkyCity’s Sol Rooftop, taking over from Kane Pollard.
Nicholson has been an integral part of Sol since it opened, working as sous chef alongside Pollard.
“We look forward to offering all occasion dining with a selection of small and large plates, catering to special occasion outings, an afternoon of grazing, or simply dropping in for a glass of wine,” said Nicholson.
“Each restaurant I’ve worked in over the years has been a little bit different, and I’ve taken knowledge from each venue with me to evolve as a chef, from woodfire grills to Japanese snacks, to Italian fare and Sol’s sustainable fine dining.”
General manager of Eos by SkyCity hotel and signature restaurants, Jodi Brown, said Sol Rooftop will relaunch with “an exciting new concept that we believe will be the pulse of Adelaide’s entertainment scene”.
“Rhys brings with him an impressive passion and drive; it’s exciting to find such talent amongst our emerging leaders,” he said.
