New rum and seafood bar Calypso Club has opened at Crystalbrook Riley resort marking the latest addition to Cairns’ hospitality scene by Crystalbrook Collection.
Calypso Club offers a menu inspired by Australian fish and chip shops and American crab shacks using fresh local seafood with dishes such as Fish burgers, Coral trout ceviche and the signature ‘Calypso Roll’, a nod to the iconic lobster rolls of New England featuring a local seasonal shellfish.
“We are thrilled to introduce Calypso Club as the newest addition to Cairns’ hospitality scene in time for the summer months,” said Melissa Shaw, Crystalbrook Riley’s general manager.
“As we unveil this new tropical oasis, we’re looking forward to offering a dining destination that captivates the senses and reflects the vibrant essence of Cairns.”
The Calypso Club marries an indoor-outdoor flow, with capacity for 100 guests.
