Chef Neil Perry is going solo again for his latest venture since quitting his culinary director role at Rockpool Dining Group last year.
Perry’s latest restaurant will open at the new Pallas House Sydney project in Double Bay.
“I’m really excited to be part of the Pallas House team,” Perry said.
“I think we all have one goal and that is to add incredible value to Double Bay.
“It is going to be a great pleasure to bring to life a world-class neighbourhood restaurant that everybody can enjoy.”
The unnamed restaurant will be the anchor tenant at the Fortis development which is due to start construction in April. The restaurant will seat 128 diners indoors with 50 more outside.
“We are confident that with Perry as our anchor tenant, Pallas House Sydney will go on to become an iconic landmark at the heart of Double Bay’s resurgence,” Fortis director Charles Mellick said.
