The catastrophic drop in business following Covid-19 restrictions has claimed another fine dining casualty in NSW with the Illawarra’s only hatted restaurant Caveau calling it quits.
Co-owners Tom Chiumento and Simon Evans took over the highly regarded Wollongong fine diner in 2017.
Speaking to the Illawarra Mercury, Chiumento said “COVID completely ruined us”.
“It is with great sadness we are closing,” he said.
“Simon and I have poured everything we have had during the last few years into it. We were working north of 80 hours most weeks. We signed up for that. But then COVID completely ruined us and made it completely not feasible for us to be able to continue which is really sad.
“It is a financial and business decision completely taken out of our hands by the coronavirus. They are circumstances out of our control.”
Caveau was launched by husband and wife team Peter and Nicola Sheppard 12 years ago and has been awarded a Good Food Guide Chef Hat ever since.
