Adam D’Sylva to bring his culinary flair to W Hotel restaurant Lollo

Adam D’Sylva, the chef behind award-winning restaurants Tonka and Coda, will help design the menu at W Melbourne’s signature restaurant Lollo.

In his new role as creative culinary director, D’Sylva will work with the hotel’s executive chef Jihun Kim to create a menu of “remixed classics sitting alongside bold innovations”.

The 110-seat restaurant will also showcase the best of Victoria’s wineries and breweries, with around 70 per cent of the extensive wine list Australian, almost half of that from Victoria.
